ViskoTeepak Introduces Multilayer Fibrous Casing for Sausage Production

ViskoTeepak's innovation Xtreme has been developed to meet the most extreme demands of meat processors with the goal of optimizing the balance and relation between casing adhesion and peeling. Optimized for tough big producer conditions where the casing needs to cope with hard stuffing and high speed peeling. Applications

ViskoTeepak Xtreme is a patented design casing for the production of semi-dry and dry sausages and is perfect for in-house slicing applications where productivity is crucial. The casing performance is optimized by modifying adhesion and release properties, so that it becomes possible to produce at extreme speeds without compromising on quality. The strength of the casing makes it not only possible to stuff at the highest speeds, it also allows for perfect caliber stability and maximized lengths of the sausages.

A true innovation

The secret of the Xtreme innovation is in the structure and makeup combination of a multilayer fibrous casing. By using a DVC method and injecting the inside layer with adhesion promoter combined with injection of peel aid into outer layer, it makes the casing construction and performance unique. Outer layer peel aid injection has also a moisture retention function, which in our own test kitchen has shown possibilities for sausage makers to dry out their sausages faster without case hardening.

Controlling both cling and peel

What you end up with is a product that has all the advantages of good meat adhesion but with adhesion control modified and tailor made according to your process it is still possible to reach perfect peeling conditions. It is offered in two standard adhesion levels (XM HPU & XM HPM) with the possibility to tailor-make according to your specific process requirements. To put it simply, this casing allows for controlled meat cling levels in the initial steps of the sausage production process. But when also adding a fixed rate peel injection you will get assist peeling and moisture retention by the time the sausages go off the rack.
